Chicken with Cucumber

Ingredients:

  • 1 lb. chicken breast
  • 4 ~ 5 tbsp. sake
  • 3 cucumber or 6 persian cucmbers (3/4 lb.)
  • 1 clove of garlic finely chopped
  • 1+1/2 tsp. finely chopped or grated ginger
  • 3 green onion
  • 2 tbsp. white sesame seeds
  • dash of red pepper (optional)
  • 4 tbsp. soy sauce
  • 1 tbsp. vinegar
  • 2 tsp. sugar
  1. Slice chicken breast holizontally into 2 pieces. Put them in a 3 qt, pan with a lid and boil then in sake until chicken is cooked.
  2. Shred chicken.
  3. Cut cucumbers to 3 inch long and cut them thinly lengthwise.
  4. Toast sesame seeds and grind.
  5. Mix garlic, ginger, chopped green onion, sesame, red pepper, soy sauce, vinegar and sugar.
  6. Spread cucumber on a 12-inch plate, making emply circle in the middle. Place shredded chicken in the empty center and pour 1/2 of the dressing on the chicken and serve the rest of the dressing as needed.
