Peanut Brittle

Ingredients (Makes about 1 pound)

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • Dash of salt
  • 1 to 1 1/2 cups shelled raw peanuts
  • 1 tablespoon margarine or butter
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon vanilla
  1. Grease baking sheet heavily.

     
  2. Combine in 2-quart pot:
    1 cup sugar
    1/2 cup light corn syrup
    Dash of salt
     
  3. Add 1 to 1 1/2 cups shelled raw peanuts and heat at medium, stirring constantly, until peanuts become more brown for about 12 minutes.

     
  4. Reduce heat to low. Stir in the remaining ingredients until light and foamy. Quickly spread on greased baking sheet. While it is hot, spread as thin as possible for brittle candy. Cool: break into pieces.
