Cream Cheese Spirals

Makes about 32 cookies

Making the Cookie dough:

  1. With an electric mixer, cream until soft and creamy:
    • 225grams/8 oz./1 cup butter (soft at room temperature)
    • 225grams/8 oz./1 cup cream cheese (soft at room temperature)
    • 20ml/4 teaspoons granulated sugar
  2. Sift over the flour and mix to form a dough. Make the dough into a ball and divide in half. Wrap each dough with a sheet of plastic and refregirate.
    • 260 grams/2 cups all-purpose flour

Making the filling:

  1. Mix together in a bowl:
    • 115 grams/4 oz./1cup walnuts, finely chopped
    • 80 grams/1/3 cup brown sugar
    • 1 teaspoon cinnamon powder

Rolling the cookies:

  1. Roll out each half dough thinly into a round (28cm/11inch) diameter.
  2. Brush the surface with the egg white glaze and sprinkle with half the filling. Cut each dough into quarters and then cut each quarter into four sections, which gives a total of 32 triangles.
  3. Roll up to form spirals.
  4. Place spirals on a lightly greased and floured baking sheet or a baking sheet lined with parchment paper. Brush with egg white. Sprinkle with granulated sugar.
  5. Bake for 15~20 minutes at 375F/190C.
