Sweet Potato and Orange
Soup

Ingredients:
- 1 lb. (450 gr.) sweet potato (1 & 1/2 ~ 2 sweet potatoes)
- 2 tbsp. olive oil
- 1/2 medium size onion (chopped)
- 1 stalk of celery ( chopped )
- 1/4 tsp. oregano
- 1 can (14 oz.) chicken broth
- 1/4 tsp. salt
- 1 cup milk or evaporated milk
- 1/4 cup orange juice (about 1/2 orange)
- 1/8 tsp - 1/10 tsp orange zest (The outermost part
of the rind of an orange)
- 1 cup water
- In a 6-qt. saucepan heat the olive oil , stir in the onion and celery
and cook for about 7 min with medium heat until the onion becomes translucent.
- Add roughly chopped sweet potato, chicken broth and water. The liquid
shoud cover the sweet potato. Bring to a boil, cover and simmer about
20 min. or until the sweet potato becomes very soft.
- Mash the sweet potato in the saucepan.
- Add salt, oregano, orange juice, orange rind and black pepper to taste.
Bring to a boil.
- Turn off the heat and add evaporated milk. Heat again before serve
but do not boil after the milk is added.
