Flour Tortillas

Ingredients for 12 tortillas

  • 3/4 pound=340 grams (2-3/4 cups ) all purpose flour or bread flour , plus a little extra for rolling the tortillas
  • 5 tablespoonsvegetable oil
  • 3/4 teaspoon salt
  • 3/4 cup=170 grams very warm water

Directions:

  1. Put all the ingredients in a large bowl and mix well. Turn the dough onto a floured work surface and kneed it for about 10-15 minutes until it is elastic. You can let a bread machine knead the dough if you have one.  
  2. Divide the dough into 12 pieces and roll each one into a ball with the palm of your hands. Cover the pieces with plastic wrap while you work. When you are finished cover all the pieces and allow to rest for 30 minutes.  
  3. Roll out each ball on a lightly floured surface using a rolling pin to make roughly 12" circle. Put your first tortilla on a dry iron skillet at low heat until it becomes blistered and brown on the heated surface. Meantime keep rolling another tortilla. I would recommend to cook each tortilla as you roll a tortilla each time. Turn the tortilla over and cook the other side for an additional minute. Wrap the tortillas in a clean dish towel to keep them warm as you heat the rest. If you like to roll all the tortillas before you cook, make sure you dust each tortillas with flour so that they don't stick to each other.
