Salsa de Cilantro

Ingredients

 

1/3 cup minced onions or scallions
1/2 cup finely chopped fresh cilantro
4 med. tomatoes, finely chopped
2 tbsp. Tabasco (optional)
2 tbsp. vegetable oil
1 tbsp. vinegar
1 tbsp. fresh lemon juice
1 garlic clove pressed
salt
ground
black pepper

Mix all the ingredients.     Refrig. 3 to 4 days.     If your tomatoes are not as sweet as home grown, make sure you add some sugar.     The sweetness of home grown tomatoes is a key to a success of this recipe.     You could add almost 1 TBSP sugar depending on your tomatoes.

Serve with corn chips.
