Ingredients for 5 or 6:
- 1/2 - 1 lb. chicken breast or stew beef (cut into cubes)
- 1/2 yellow onion
- 2 carrots
- 1 stalk celery
- 2 large potatoes
- 6 cups water
- 1 tbsp. salad oil
- 2 whole bay leaves
- 2 cloves garlic
- 1/2 tsp. ginger
- 1/2 tbsp. sugar
Optional:
- 1/2 bell pepper
- 2 cups corn
Seasonings:
- 1/2 tsp. coriander
- 1/2 tsp. turmeric (optional)
- 2 tsp. cumin powder
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1 oz. Golden Curry Sauce Mix
(or any Japanese Curry
Mix, available at Safeway and other grocery stores)
Instructions:
- In a large pot, saute until sugar and chopped onions become caramelized at medium heat.
- 1/2 yellow onion, chopped
- 1/2 tbsp. sugar
- 2 cloves garlic, minced
- 1 tbsp. salad oil

Caramelized onions.
- Add and saute together until the meat becomes browned:
- 1/2 lb. - 1 lb. chicken breast or stew beef (cut into cubes)
- 1/2 tsp ginger, minced
- 1/2 bell pepper, chopped (optional)
- 1 stalk celery, finely chopped
- Add and bring to a boil. Skim foam and simmer with a lid for 30 minutes to one hour:
- 6 cups water
- 2 whole bay leaves
- 2 carrots, chopped
- 2 large potatoes, chopped into thirds
- At this point the potato should be soft. Take out a couple of chunks
of potato and mash them. Add the mashed potatoes back to the pot.
This will help thicken the curry stew.
- Add, bring to a boil and simmer covered for 10 minutes:
- 2 cups corn (optional)
- Add the seasonings and simmer until the sauce mix blends. Stir occasionally.
- 1/2 tsp. coriander
- 2 tsp. cumin powder
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1 oz. Golden Curry Sauce Mix

Golden Curry Sauce mix is 3.5 oz. Use about 1/3 of it.
- Serve over hot steamed rice.
Notes:
- [] Turmeric is believed to be
very good for your health. Scientists have observed a link between cultures
that consume turmeric and lower occurrences of Alzheimer's disease, cancer and
arthritis.
- [] You can use the whole
package of Golden Curry Sauce Mix and exclude all the
other ingredients listed in "Seasonings", if you prefer.
