Beef Stew

Ingredients:

  • 1 lb. well-marbled beef stew meat
  • 1 Tbsp. vegetable oil
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1/4 cup red wine
  • 2 red potatoes, peeled and cut into 1" cubes
  • 2 medium carrots, chopped
  • 2 celery, chopped
  • One 14 fl. oz. can diced tomatoes
  • 1/2 tsp. salt or to taste
  • 1 bay leaf
  • 1/2 - 1 Tbsp. sugar

Directions:

  1. In a large pot, heat up 1 Tbsp. vegetable oil over medium heat. When surface just starts to smoke, add meat and brown the outside.
  2. Add chopped onions and saute until meat is no longer pink. Add minced garlic and saute until garlic becomes fragrant.
  3. Add red wine and enough water to cover the beef, then bring to a boil. Skim foam and simmer with a lid for 1 hour.
  4. Add potatoes, carrots, celery, canned tomatoes, salt, sugar, and the bay leaf. Bring to a boil and skim the foam. Cover and simmer for 1 1/2 hours.
