Tilapia Baked in Lemon and Mayonnaise
Ingredients
- 1 lb.Tilapia filets
- 1/8 cup lemon juice
- 1/8 cup sherry or white wine
- 1 tomato chopped
- 1/2 medium yellow onion
- 1/2 medium red onion
- 1 tbs chopped garlic
- 1 tsp. oregano
- 1/4 tsp. ground black pepper
- 2 tbsp. finely chopped fresh basil leaves
- 4 tbsp. mayonnaise
- 1/8 tsp. salt
- 2 tsp. sugar
- 1 tbsp. olive oil
- Rinse and dry 1 lb. tilapia filets. Place them
in a 2-quart baking dish.
- Slice 1/2 medium yellow onion and 1/2 medium red
onion.
- In a frying pan over medium high heat add :
1 tbsp. olive oil,
1 tbs. chopped garlic ,
sliced yellow onions and red onions
1 tsp. oregano,
1/4 tsp. ground black pepper ,
2 tbsp. finely chopped fresh basil leaves,
1/8 tsp. salt and
2 tsp. sugar.
Sauté until onions become soft and translucent.
- Add chopped tomato, 1/8 cup lemon juice
and 1/8 cup sherry. Keep cooking over medium high
heat until the mixture thickens.
- Add 4 tbsp. mayonnaise.
- Pour sauce over the tilapia and allow to sit for 30 min to 2 hours
with a cover in refrigerator. Preheat oven to 350. Bake at 350 for
30 minutes without a cover.
