Tilapia Baked in Lemon and Mayonnaise



Ingredients

  • 1 lb.Tilapia filets
  • 1/8 cup lemon juice
  • 1/8 cup sherry or white wine
  • 1 tomato chopped
  • 1/2 medium yellow onion
  • 1/2 medium red onion
  • 1 tbs chopped garlic
  • 1 tsp. oregano
  • 1/4 tsp. ground black pepper
  • 2 tbsp. finely chopped fresh basil leaves
  • 4 tbsp. mayonnaise
  • 1/8 tsp. salt
  • 2 tsp. sugar
  • 1 tbsp. olive oil
  1. Rinse and dry 1 lb. tilapia filets. Place them in a 2-quart baking dish.
  2. Slice 1/2 medium yellow onion and 1/2 medium red onion.
  3. In a frying pan over medium high heat add :
    1 tbsp. olive oil,
    1 tbs. chopped garlic ,
    sliced yellow onions and red onions
    1 tsp. oregano,
    1/4 tsp. ground black pepper ,
    2 tbsp. finely chopped fresh basil leaves,
    1/8 tsp. salt and
    2 tsp. sugar.
    Sauté until onions become soft and translucent.
  4. Add chopped tomato, 1/8 cup lemon juice and 1/8 cup sherry. Keep cooking over medium high heat until the mixture thickens.
  5. Add 4 tbsp. mayonnaise.
  6. Pour sauce over the tilapia and allow to sit for 30 min to 2 hours with a cover in refrigerator. Preheat oven to 350. Bake at 350 for 30 minutes without a cover.
