Halibut with Capers

Ingredients for 2 ~ 3 persons

  • 1 lb. Halibut
  • 1/2 lemon juice
  • 2 tbsp. sherry or white wine
  • 1/2 red bell pepper finely chopped
  • 1/2 medium sweet white onion
  • 1/8 cup capers canned or jarred
  • 10 mushrooms sliced
  • 1 tsp. oregano
  • 1/4 tsp. ground black pepper
  • 2 tbsp. finely chopped fresh basil leaves (optional)
  • 2 tbsp. mayonnaise
  • 1/4 tsp. salt
  • 1 tsp. sugar
  • 1 tbsp. olive oil
  • 1 tbsp. chopped garlic
  • 1 tbsp. butter or margarine
  • 2 tbsp. parmesan cheese (optional)
  1. Rinse and dry 1 lb. halibut. Place them in a 2-quart baking dish. Sprinkle 1/2 lemon juice and 2 tbsp. sherry or white wine.

  2. Chop finely and sprinkle over the fish:
    1/2 red bell pepper
    1/2 medium sweet white onion
    10 mushrooms sliced
    1 tsp. oregano
    1/4 tsp. ground black pepper
    2 tbsp. finely chopped fresh basil leaves (optional)
    1/8 cup capers canned or jarred
     
  3. In a ceramic bowl heat until butter melts in a microwave oven and stir well:
    1 tbsp. butter or margarine
    1 tbsp. chopped garlic
    1 tbsp. olive oil
    1 tsp. sugar
    1/4 tsp. salt or to your taste
    2 tbsp. mayonnaise
     
  4. Pour the sauce, sprinkle parmesan cheese over the fish and bake at 375 for 20 minutes.
