Rinse and dry 1 lb. halibut. Place them in a 2-quart
baking dish. Sprinkle 1/2 lemon juice and 2 tbsp.
sherry or white wine.
Chop finely and sprinkle over the fish:
1/2 red bell pepper
1/2 medium sweet white onion 10mushroomssliced 1 tsp. oregano
1/4 tsp. ground black pepper
2 tbsp. finely chopped fresh basil leaves (optional)
1/8 cup capers canned or jarred
 
In a ceramic bowl heat until butter melts in a microwave oven and
stir well:
1 tbsp. butter or margarine
1 tbsp. chopped garlic
1 tbsp. olive oil
1 tsp. sugar
1/4 tsp. salt or to your taste
2 tbsp. mayonnaise
 
Pour the sauce, sprinkle parmesan cheese over the
fish and bake at 375 for 20 minutes.
