Ingredients

  • 1 pint (1 pound) plain yogurt (450grams, about 2 cups)
  • 2 + 1/2 cups sugar (500grams)
  • 1 1/2 teaspoon citric acid powder (or 9 tablespoons of lemon juice. Result is much better with citric acid powder. If using lemons, you will need a lot of lemon juice to get strong acidity.
  • 1 teaspoon vanilla extract
  1. Mix in a medium size pot:
    1 pint plain yogurt
    2 + 1/2 cups sugar
     
  2. Heat it in the double boiler constantly stirring for about 15 min. at about 160°F to 175°F.Never let it boil.
     
  3. When the syrup is at room temperature, add:
    1 1/2 teaspoon citric acid powder
    1 teaspoon vanilla extract
     
  4. For serving dilute the syrup with 3 or 4 times of water or soda to your taste. Serve with ice and a slice of lemon.
